Asian Beef marinate (sach ko bralak)
4lbs London broil or any good meat cut to about 1inch thick
1/3 to 1/2 cup Yoshida sauce (if you don't like sweet use 1/3)
4 T of oyster sauce
4 T of seasoning soy sauce
4 cloves garlic
1 T of fresh ginger
1 t of black pepper
In a mortar pestle smash garlic and ginger till soft, spoon into a big bowl for marinate.
Marinate the meat with the rest of the ingredient over night
Take the marinate meat out and dry it under the sun or food dryer till it is dry
Grill meat till it is crispy and turn brown a bit. If you sliced the meat thin enough you
Can microwave it for a minute or so
Serve with lime garlic fish sauce chili dip

Easy Banana Muffins
EASY BANANA MUFFINS
1 ½ cups of flour
1 t baking soda
1 t baking power
1/2 t salt
3/4 cup sugar
1 egg
1/3 cup butter, melted
3 ripe bananas
Mix 2 T of bown sugar, Cinnamon, butter for topping
In large bowl mix butter, egg and bananas till smooth then add all the dried ingredients, mix well.
Spoon batter into prepared muffin cups. Top with bown sugar,cinnamon mixture.
Bake at 375 degree for 18 to 20 minutes till done.

EZ Spring Rolls
Easy Spring Rolls
1pg (25) of spring roll wrappers
1 lb of ground pork
1 cup of shredded cabbage
1 cup of shredded carrot
2 cloves minced garlic
2 T of oyster sauce
1 T of sugar or less
1 T of soy sauce
1/2 t of black pepper
Egg white
6 cups of vegetable oil to deep fry
Mix all the ingredients together set aside.
Peel the wrapper one at a time
Spoon the spring roll mixture put it on the top center
Roll it downward and fold each side in then continue to roll
Till all the end of the wrapper
Seal the wrapper with egg white.
Heat 6 cups of vegetable till hot on medium heat
Put few spring rolls at a time to deep fry till golden brown
Take it out drain on paper towel.
Serve spring rolls with Thai sweet and chili sauce.

Easy Chicken Thigh Marinate
Asian Noodle Salad With Sesame Dressing
ASAIN NOODLE SALAD WITH SESAME DRESSING
I don’t have exact recipes for this salad I made up as I do it. You will need:
Cooked Spaghetti (to the amount you family will eat)
1 cup of Napa cabbage or bok choy ( I like Napa)
1 cup of shredded carrot
1 cup of sugar snap pea
1 red bell pepper sliced
1 cup of cucumber sliced
Bean sprout
Cilantro for garnish
Mints for garnish
You can put any green vegetable you like even broccoli
Sesame dressing to serve 3 to 4 people
3 T of rice vinegar
3 T of soy sauce
3 T of hoisin sauce
2 T of brown sugar
5 T of vegetable oil or olive oil
1 t of sesame oil
1 t of rooster sauce (chili sauce)
1 t of minced ginger
1 t of minced garlic
1 t of toasted sesame seeds (to sprinkle on the salad when serve)
Mix all the ingredients in a jar and sake it well (you can mix it overnight for flavor)
When ready to serve mix the cooked spaghetti and green all together toss with the sesame dressing. Sprinkle with toasted sesame seeds.

Asian Sandwich
Asian Sandwich
I don’t have exact recipe for this sandwich so I make up as I go, you need the following ingredients
French baguette
Mayonnaise or Vietnamese paste
Jalapeno pepper
Cucumber
Cilantro
Soy sauce
Rooster sauce
For the meat
You can use any kind of lunch meat,BBQ meat, or sardine
Pickle carrot daikon
4 cups of mix carrot and daikon julienned
1 cup of water
1/4 cup of sugar+1 T
1/4 cup of vinegar + 2T
1 1/2 to 2 T of salt
in a big bowl dissolved 1 cup of water with salt, sugar, vinegar then add carrot daikon.
Put the pickle in a clean jar keep in the fridge until ready to use.
To make the sandwich you need to toast the baguette (you can eat it cold, but toast is better)
Slice the bread length wide spread with mayonnaise or Vietnamese paste
Arrange the meat and jalapeƱo, cucumber, and then drizzle soy sauce, rooster sauce, top with pickle
Carrot daikon and top with few pieces of cilantro.

Roasted Chicken
CHINESE ROASTED CHICKEN
To brine the chicken
4-5 lbs roasting chicken
1/2 cup kosher salt
1/4 cup sugar
4 cups of cold water
2 T of oil
1 t Chinese five spice
3 gloves of garlic sliced
5 slices of ginger
Glaze:
1/2 cup of Chinese rice wine
1/4 cup of soy sauce
1/4 cup of Worcestershire sauce
1 t of chili garlic or rooster sauce
2 T hoisin sauce
1/4 cup of brown sugar
1 T of minced fresh garlic
1 T of minced fresh ginger
Mix them all together and set aside for basting.
Combine salt, sugar and water then put the chicken in let it sit for 1 hour in room temperature
Take it out and pat dry.
Rub with 1 T of oil and five spices
Stuff the cavity with garlic and ginger slices
Secure the chicken with toothpicks
On the stovetop, Heat a large oven proof pan with 2 T of oil then sear the chicken 5 minutes on each side
Apply some glaze on the chicken (both sides)
Then transfer pan and chicken to 350 degree oven
Baste the chicken with the remaining sauce, glaze every 10 minutes
untill the chicken is done roasting (about 2 hours or less depend on your oven)
Note: if it is starts to burn on the top, cover with foil at the end for the last 20 minutes or so, make sure the entire glaze is gone before you cover.

Chow Mein
STIR FRY CHOW MEIN NOODLE
1/2 pg of fresh miki noodle or chow mein noodle
1 cup of sliced cabbage
1/4 onion sliced thin
1/2 carrot sliced thin
1/2 cup of sliced meat
1 cup of bean sprouts
1 to 2 T of chopped garlic
2 green onions
3 T of oil for stir fry
SAUCE FOR STIR FRY
3 T of soy sauce
3 T of Yoshida sauce from Costco
2 T of oyster sauce
1/2 t of sesame oil
1/2 cup of chicken broth
Mix them all together and set aside.
PREPARATION
Heat oil in a wok till hot, add garlic stir fry until brown
Add carrot stir fry till tender then add meat cook till the meat no longer pink
Add cabbage and onion stir fry till tender
Add noodles and stir fry
Add the sauce mix well till the noodle hot
Add the green onion
Turn the heat off then
Add bean sprout last.
Enjoy!
Banana Bread
QUICK AND EASY BANANA BREAD
1 box of (18.25 oz) yellow cake mix
3 eggs
1/3 cup of vegetable oil
5 ripe bananas
Mix the banana with eggs, oil till soft then
Add the yellow cake mix till smooth.
Spray 2 baking dish (bread loaf size) divide the batter to 2 equal amounts (you will get 2 loafs)
Bake at 350 degree oven for 35 to 40 minutes depending on your oven.
Let it cool before serving.
(this is the easy way to make banana bread.)

Cambodian Sausage (Twa Ko)

As you try to make and enjoy the Twa Ko or Twa Ko kroeung recipe, please note that there is no Twa Ko recipe on line anywhere. I would like to ask that you only make it for families and friends to enjoy, but not for sell. Be honest and let us enjoy sharing and serving others without cost. Have fun making them.

3 1/2 lbs of beef or pork with 25% fat cut to small pieces
you can also use pork belly it will give enough fat for the sausage.
1 cup of left over rice
1/2 cup of minced galangal
1/2 cup of minced garlic
3 to 4 T of oyster sauce
1 T of chilies for spicy twa ko (optional)
3 T of fish sauce
1 pg of Nam powder (use the clear bag inside also)
1 pg of Chinese BBQ pork seasoning (some have 2 pkg in one envelope)
this will make the twa ko red color and sweet.
Pork casing (wash the outside and inside real good because it has salt in it.)
Mix everything together (except the rice), then add the rice last so the rice won’t stick.
You can use regular rice or sticky rice.
Stuff the twa ko in the casing and twist into small links. I put on the rack and fan dry for few hours or dry under the sun. Twa Ko can be kept in the freezer for later use.
